Katelyn Freimiller was a student at the University of Evansville, playing soccer and studying physical therapy, when she fractured her back and had to leave behind her sporting passion.
“That sort of made me reevaluate what I wanted to do for the rest of my life,” says Freimiller. “I realized I wanted to do something that not only brought me happiness, but brought others happiness and brought people together.”
On Aug. 1, she began selling gourmet pop tarts, like apple spice and hot chocolate, at The Refinery in Newburgh, Indiana. The baker also makes artisanal breads, pastries, and cookies, which can be found at The Refinery, White Swan Coffee Lab, and River City Coffee + Goods or custom ordered.
