Shrimp Pugliese at Sauced is one of the restaurant’s ‘most popular dishes’

Opened in 2014, Sauced in Haynie’s Corner has become a hit upscale restaurant and bar, and it attributes some of that success to one of its most popular menu items: shrimp Pugliese.

“It was one of the first things we came up with when we were building the menu as we were opening,” says Sauced general manager Reid Small. “It’s been one of our most popular dishes since we opened.”

Composed of Sauced’s house-made pasta, pan seared shrimp, cherry tomatoes, red onions, spinach, capers, lemon, a splash of siracha, white wine, and a house vegetable medley, the shrimp Pugliese is a spicy, yet delicious compliment to the Italian-American cuisine at Sauced.

The Pugliese sauce combines the tangy, spicy flavors of the reduced wine with the acidity from the lemon and tomato to create a taste unlike anything in the area.

Invented by owner Scott Schymik, Small says Sauced sells about 40 dishes of shrimp Pugliese a week, making it one of the restaurant’s best-selling menu items.

Small himself can’t hold back from the tasty dish, as it’s his favorite on the menu.

“It’s the first thing I ever had here, and it’s not gotten old on me,” he says.

Sauced launched a new menu the last week of April, bringing back a full menu after limiting its offerings for during the pandemic. One of these new menu items is the eggplant lasagna — layers of fried eggplant, mozzarella cheese, and marinara sauce topped with an herbed ricotta cheese and garnished with pesto sauce.
